FIT 4 LIFE
I am a fan of exercise and healthy eating. I love to cook, drink wine and eat. also i love to cycle and garden and just be outside. I am happiest when i am moving and doing a wonderful and fun activity like hiking and biking. Encouraging others and watching the results in day to day activity is a joy. Life is too short to think about .. just get out and enjoy each day to its fullest. LIVE LOVE AND LAUGH EVERY DAY.. ALSO THANK GOD for each day.

bugs at sushi place
well... my husband and a friend went to eat at our local sushi place...its ok.. not bad but not great either. for us sushi lovers its all we have. While they had their food and started eating, 2 ladies had just sat down at their table and their screamed a very high pitch scream and got up quickly and out the door they went. Funny thing about this is that everyone looked but no one else cared to know WHAT IT WAS. I MEAN REALLY???? i don't like to share my food with bugs. he said it had to have been a roach or even a mouse.. thats how bad the scream was. The waitress did follow them outside to see what the problem was, but he still doesn't know. He could hardly finish his meal. and kept looking around for bugs. Interesting how NO ONE seemed to mind that this happened.. oooohhh gross.. hence the reason i rarely eat out.

books
Hi... so today is a snowy day. so pretty but i'm ready for springtime. Its been a mild winter and that means more time outside doing what i love...riding my bike.
but for a day like today i have a great book to read, its a quick read and keeps you interested the whole book has a great message. LOST DECEMBER!!! BY Richard paul Evans. i think you'll love it. would be a great book for a day like today.

Ingredients
- 2 pounds ground beef
- 1 (1.25 ounce) package taco seasoning mix
- 1 1/2 cups water
- 1 (15 ounce) can mild chili beans
- 1 (15.25 ounce) can whole kernel corn, drained
- 1 (15 ounce) can pinto beans, rinsed and drained
- 1 (14.5 ounce) can stewed tomatoes
- 1 (10 ounce) can diced tomatoes with green chile peppers
- 1 (4 ounce) can chopped green chilies
- 1 (1 ounce) package ranch salad dressing mix
Directions
- In a Dutch oven or large kettle, cook beef over medium heat until no longer pink; drain. Add taco seasoning and mix well. Stir in remaining ingredients. Simmer, uncovered, for 15 minutes or until heated through, stirring occasionally.
- ALSO.. i make a simple and very moist cornbread.. i use jiffy corn mix.. 1 box
- 2 eggs and 1/2 stick butter and 1 cup of cottage cheese.. yes thats right
- mix all together and spray dish 8x8 and bake til golden brown.. not over cooked.
- sooo good . my family LOVES THIS CORNBREAD.

MAUI 2012
SO I can now describe one of my perfect days. We have waited 28 yrs to get to Hawaii. This particular day my husband had a meeting , yes in maui, so i have always wanted to try to paddle board. I tried it all by myself. all i can say is ...WOW ITS HARD. i could not believe how much of your entire body it took to keep my balance. From my toes to my abs to my shoulders. So cool. Such a challenge. I went pretty far out into the Deep, rich blue ocean,, looking for whales. I know.. probably NOT a great idea on a paddle board. But there were others out there too, most of them in kayaks. We did see some whales way out . Actually could see them spouting. thats a "whale" term you learn right away. Then I got my balance and confidence up, decided to sit then lay back on the board and float and wow the peace and happiness i felt was incredible. i lay there floating and thinking just how cool this was. Then i glanced back to the resort and realized i should get up and head back. On my paddle back in i saw spotted eagle rays.. like a large sting ray. The water was so very blue and easy to see the bottom far down there. But i didn't spot much more than the rays at that time. After my husband got done at lunch time we then kayak'd and saw the coolest large sea turtle.. he was very close to us and large and just cool. AFter an hour or so of kayaking and whale watching we decided to head to a cool town we had biked in the day before. Piai is a cool little local town, and we ate at a famous EXPENSIVE place on the beach called MAMA'S FISH HOUSE. So worth it. this pic is the view we had from our table.. minus us of course. ha ha We were inside . but there were no windows.,, all open air and wonderful. The food was more than amazing . The whole experience was amazing. view, food, drink and service. After our heavenly meal we drove a mile to the NORTH SHORE,, some very large waves with the prettiest water, many surfers all bobbin in the waves waiting for a good one, mountains in the background and the wind blowing in our face. We stood there watching and looking at the gorgeous place and surfers for an hour. Wow, It was so awesome. Made it back to see the sun set and enjoy a light dinner. We spent the day moving and exploring and being so together in the moment of whatever the day brought. Totally awesome. !!!

Hi all, this is my 1st blog,,,my son told me about this blog site so i am gonna try to give it a shot.I want to send a recipe several times a week and also encourage and give other eating tips. I have been doing a bootcamp with some brides to be and some of their wedding party and even 1 groom is coming.!!!! so much fun. i Love to move and eat Healthy and want other ladies to enjoy life to its fullest. When we feel good about ourselves, its much easier to feel good about other tasks in life. So why should we feel any less that OUR BEST? The Best is what God wants us to have. Our best reflects everything we do every minute of our day. So stay tuned and keep reading. thanks
